It is hot and I am running out of ideas
So, it hit another sweltering temperature today with humidity making me feel like I want to live in the water. This doesn't give me much time for cooking so I have been coming up with "Think Cool" dinners. Last night after being in the pool for 2 hours I grabbed a bag of Langostino from the freezer. I get these from Trader Joes and we really like them.
Coming home from our camping trip I found my garden kicking ass. So, I decided that pesto would be a good choice for the pasta and lagostino.
So, it wasn't a recipe really but here is what I did for the pesto
Pesto
1 large bunch of basil leaves
3 medium cloves of garlic (I used 2 garlic scapes)
one small handful of raw pine nuts
roughly 3/4 cup fresh Parmesan
1/4 C olive oil
1. Pulverize the basil and garlic together in the food processor.
2. Add pine nuts and process.
3. Add Parmesan and give a whir.
4. Slowly add olive oil with motor running.
I then cooked up the pasta and I sauteed the Langostino in about 2 Tbl of butter. I then added the drained pasta in the pan with the langostino and mixed in some of the pesto.
I was really happy with this dinner.
Oh, and here is an eagle that I saw on my camping trip.
Just thought I would share.

ReplyDeleteI love pesto, especially when the basil is from my garden. I freeze it in small three tbsp packages to use after the season has gone.
