Sometimes a small thing means a LOT

Came home today from running mindless errands and found this box on my porch. It was from Dr. Food's uncle Ralph in Texas. I posted about my trip to Texas a while back. Uncle Ralph was one of the highlights of my trip. Dr Food takes me over to his aunt and uncle's house to meet them. Working up a storm in the kitchen is Uncle Ralph. He is a canner and was in that kitchen chopping up LOTS of garlic and stuff. I got my pickled okra recipe from him (Dr. Food's favorite). Uncle Ralph also makes wine. Never did get to taste the wine but I am sure that I will someday. Anyhow, what was in the box today was like a perfect gift. It came from the heart and the person who sent it "got" how I feel about canning and cooking and well all that stuff.

Uncle Ralph had sent his own Salsa, Spaghetti sauce, Pickled Okra, and his Squash Relish. I can't wait to try them all.

Shhhh...don't tell but here is the recipe for Squash Relish

12 C grated squash
4 C chopped onion
4 bell peppers
4 hot peppers
1 red pepper or pimento

Sprinkle 5 teaspoons salt over above. Let set overnight. Next morning squeeze out brine. Rinse in cool watr.
Mix in a large pot
5 C sugar
2 1/2 C vinegar
1 tsp tumeric
1 tsp pickling spice (tied in a cloth)
Bring to a boil, add squash, bring to a boil again. Turn off as soon as it comes to a boil. Seal jars in appropriate manner.

So, I promised to send Uncle Ralph recipes for Sauerkraut and Kimchee. His interest are endless. Something about the idea of him making Kimchee in that kitchen in Texas makes me smile. Thanks, Uncle Ralph.

  4. Oh, what a cool gift! and I peeked at your post about Texas (as that is my home state!) and I too LOVE fried chicken gizzards and livers. Yum.

  6. I need the sauerkraut recipe! I tried to make it once, and it didn't go so well.

    I am canning this weekend - about 12 quart jars of pasta sauce! :D
