Sneaky food day 2

So, it is day 2 of "home alone so eat what you wanna eat". I chose to eat another Donna Hay recipe because I love her food. It was Thai Chicken Salad. Easy and yet comfort food to me. Dr food would go for it but I think the lettuce wrap part would go against the Texan in him.

Thai Chicken Salad
Donna Hay recipe from New Food Fast

1 tbl oil
1 tbl chopped ginger
1 stalk lemongrass
3 red chillies, chopped
1lb minced chicken
1/4 C lemon juice
1 tbl fish sauce
1 red onion, thinly sliced
1 C coriander
2tbl shredded basil
lettuce leaves to serve

Heat oil in a frying pan over high heat. Add the ginger, lemongrass, and chili and cook for 1 minute. Then add the chicken and cook, stirring to break up any lumps, for 5 minutes or until the chicken is cooked.

Remove the chicken from the heat and cool slightly. Combine the lemon juice and fish sauce, and pour it over the chicken. Add the onion, coriander and basil. Serve the salad in small bowls with side plates of crisp lettuce leaves to eat with the salad.
Serves 4.

I went to the market and imagine my disgust when I couldn't even get lemongrass at the supermarket. How the hell did I end up in a place that doesn't have lemongrass in every market? Pfft. I went home defeated but when I looked in my refrig I found that I had some from the asian market that I had been to a week before. A bit battered but it would work fine.

I had a good day though. I went to the Berkshires and bought myself a lamb. It was butchered to my specifications so we are set for the winter. Not so easy to come by until next year.

This lamb is unbelievably good. It comes from Leyden Glen Farms. Kristen is the best!

So tonight was the last night of sneaky food. Dr Food comes back tomorrow and although we are very compatible taste wise in food it still means that it isn't just me me me.

  2. This sounds wonderful. You know, I was suprised to discover that my meat-and-potatoes Texan husband loves lettuce wraps - I made some not long ago for him! Maybe, just maybe yours would too?

  4. Like the recipe...did you mean to say a CUP of Coriander?

    Just made Lamb chops yesterday. I love Lamb chops, but my wife is against all lamb (she has other good qualities), so I will never have a freezer full of lamb... jealous
